Make these easy, gooey peanut butter Rice Krispie treats. This no-bake dessert combines creamy peanut butter with crispy cereal and is topped with a simple chocolate layer for a quick sweet snack.

Ingredients

Scale
  • 6 cups crispy rice cereal
  • 1 cup creamy peanut butter
  • 1 cup (2 sticks) unsalted butter
  • 1 (10 ounce) package marshmallows
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (for topping)
  • 1/4 cup butterscotch chips (for topping)

Instructions

  1. Lightly grease a 9×13 inch baking pan. Set aside.
  2. In a large saucepan, melt the butter over low heat.
  3. Add the marshmallows to the melted butter. Stir constantly until the marshmallows are completely melted and smooth. Remove the pan from the heat.
  4. Stir in the peanut butter and vanilla extract until fully combined.
  5. Add the crispy rice cereal to the marshmallow mixture. Fold gently until the cereal is evenly coated.
  6. Press the mixture evenly into the prepared baking pan. Do not press too firmly to keep the treats chewy.
  7. In a microwave-safe bowl, combine the chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring between each, until smooth.
  8. Pour the melted chocolate mixture over the cereal base. Spread evenly or create a swirl pattern with a knife.
  9. Let the bars set at room temperature for about 1 hour, or chill in the refrigerator for 20 minutes until the topping is firm.
  10. Cut into squares before serving.

Notes

  • For the chewiest treats, use fresh marshmallows.
  • If you prefer a thicker bar, use a 9×9 inch pan instead of a 9×13 inch pan.
  • You can substitute peanut butter chips for the butterscotch chips if you want a stronger peanut butter flavor in the topping.
