1 pound ground sausage
1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
1 (16 ounce) package Velveeta cheese, cut into cubes
1 (8 ounce) package cream cheese, cut into cubes
1 tablespoon taco seasoning (optional, for extra flavor)
Instructions
Brown the ground sausage in a skillet over medium heat. Drain off any excess grease completely.
Transfer the cooked sausage to a small slow cooker.
Add the undrained Rotel tomatoes, Velveeta cubes, cream cheese cubes, and taco seasoning (if using) to the slow cooker.
Stir the ingredients together gently.
Cook on LOW for 2 hours, stirring every 30 minutes until the cheeses are fully melted and the dip is smooth and creamy.
Alternatively, cook on HIGH for 1 hour, stirring frequently.
Serve warm directly from the slow cooker with tortilla chips, crackers, or vegetable sticks.
Notes
For a smoother dip, you can microwave the Velveeta and cream cheese with the Rotel until mostly melted, then transfer to the slow cooker with the sausage to keep warm.
If you prefer ground beef instead of sausage, use 1 pound of browned and drained ground beef.
This dip stays warm nicely on the ‘Keep Warm’ setting of your slow cooker for serving throughout a party.
