  • 1/2 cup butter, softened to room temperature
  • 1 2/3 cups granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 3 cups apples, peeled, cored, and diced (about 3 medium apples)
  • Optional: 1/4 cup chopped pecans or walnuts
  • Optional Topping: 2 tablespoons granulated sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13-inch baking pan.
  2. In a large bowl, use an electric mixer to cream the softened butter and 1 2/3 cups of sugar until the mixture becomes light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, and cardamom.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix the batter.
  6. Gently fold in the diced apples. If you are using nuts, fold them in now.
  7. Spread the batter evenly into your prepared baking pan.
  8. If using the optional topping, sprinkle the cinnamon-sugar mixture evenly over the top of the batter.
  9. Bake for 40 to 45 minutes, or until a wooden pick inserted into the center comes out clean.
  10. Let the cake cool in the pan on a wire rack before slicing. Serve warm or at room temperature.
