Easy No-Bake Fresh Strawberry Pie Recipe

Make this refreshing, easy no-bake strawberry pie using fresh berries and a simple glaze. It is a perfect, light dessert for summer gatherings.

  • 1 pre-made 9-inch flaky pie crust (baked or graham cracker)
  • 6 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 cup water
  • 1/4 cup strawberry gelatin powder (Jello)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 cup cold water (for whipped cream)

Instructions

  1. Prepare your pie crust according to package directions if you are baking it, or use a store-bought crust as is for a no-bake version. Let the crust cool completely if baked.
  2. In a medium saucepan, combine the granulated sugar and cornstarch. Whisk them together well.
  3. Add the 1/2 cup of water to the sugar and cornstarch mixture. Stir until smooth.
  4. Place the saucepan over medium heat. Cook, stirring constantly, until the mixture thickens and begins to bubble. This should take about 5 to 7 minutes.
  5. Remove the saucepan from the heat. Whisk in the strawberry gelatin powder and lemon juice until the gelatin is fully dissolved into the hot mixture. Stir in the vanilla extract.
  6. Allow the strawberry glaze mixture to cool for about 15 minutes. It should still be pourable but not hot enough to wilt the fresh berries.
  7. Gently fold half of the fresh strawberries into the slightly cooled glaze mixture.
  8. Pour the strawberry glaze and berry mixture evenly into the cooled pie crust. Arrange the remaining fresh strawberries decoratively on top of the filling.
  9. Chill the pie in the refrigerator for at least 4 hours, or until the filling is completely set.
  10. Before serving, prepare the topping: Beat the heavy whipping cream with the powdered sugar and 1/4 cup of cold water until stiff peaks form.
  11. Top the chilled pie with the fresh whipped cream or serve slices with a dollop on the side.

Notes

  • For a cream cheese layer, spread 8 ounces of softened cream cheese mixed with 1/4 cup powdered sugar over the bottom of the cooled crust before adding the strawberries and glaze.
  • If you prefer a firmer, brighter red glaze, you can substitute the gelatin powder with 1 tablespoon of cornstarch and a few drops of red food coloring.
  • This pie tastes best when served the day it is made, as the fresh berries will release moisture over time.
