  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the steak cubes dry with paper towels. This helps achieve a good sear.
  2. In a medium bowl, toss the steak cubes with salt, pepper, garlic powder, onion powder, and paprika until evenly coated.
  3. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  4. Add the seasoned steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
  5. Sear the steak for 2 to 3 minutes per side until a brown crust forms. You want the inside to remain medium-rare to medium for the best texture.
  6. Remove the seared steak bites from the skillet and set them aside on a clean plate.
  7. Reduce the heat to medium-low. Add the butter to the same skillet.
  8. Once the butter melts, add the minced garlic. Cook for about 30 to 60 seconds until fragrant, being careful not to burn the garlic.
  9. Return the steak bites to the skillet. Toss them quickly in the melted garlic butter for about 30 seconds to coat them completely.
  10. Remove the skillet from the heat. Stir in the fresh parsley.
  11. Serve your juicy cubed steak immediately as a main course or appetizer.

Notes

  • For the most tender sirloin bites, do not overcook the steak. Remove them from the heat when they reach your preferred doneness.
  • If you are serving these steak bites with potatoes, cook your potatoes first and keep them warm while you prepare the steak.
