1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 lb fresh green beans, trimmed
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon red pepper flakes (adjust for heat preference)
1/2 teaspoon dried Italian seasoning
1/4 cup chicken broth
2 tablespoons fresh lemon juice
Salt and black pepper to taste
1 tablespoon olive oil
Instructions
Season the cut chicken pieces generously with salt and pepper.
Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Add the trimmed green beans to the same skillet. Cook, stirring occasionally, for 4 to 6 minutes until they are bright green and slightly tender-crisp.
Reduce the heat to medium-low. Add the butter, minced garlic, and red pepper flakes to the skillet with the green beans. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
Stir in the Italian seasoning and chicken broth. Bring the liquid to a gentle simmer.
Return the cooked chicken to the skillet. Toss everything together to coat the chicken and beans evenly with the sauce.
Cook for 1 to 2 minutes until the sauce has slightly thickened and the chicken is reheated.
Remove the skillet from the heat. Stir in the fresh lemon juice. Taste and add more salt or pepper if needed. Serve immediately from the skillet.
Notes
For a richer sauce, you can add 2 tablespoons of grated Parmesan cheese at the very end, just before serving.
If you prefer milder heat, start with 1/2 teaspoon of red pepper flakes and taste before adding more.
