  • 1 (3 to 4 pound) bone-in or boneless turkey breast
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 teaspoon dried sage
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium chicken broth
  • 1/2 cup water
  • 2 tablespoons cornstarch (for gravy)
  • 1/4 cup cold water (for gravy slurry)

Instructions

  1. In a small bowl, mix together the dried thyme, rosemary, sage, garlic powder, onion powder, salt, and pepper. This is your herb rub.
  2. Pat the turkey breast dry with paper towels. Rub the herb mixture evenly over the entire surface of the turkey breast.
  3. Place the seasoned turkey breast skin-side up in the basin of your slow cooker.
  4. Pour the chicken broth and 1/2 cup of water around the base of the turkey in the slow cooker. Do not pour liquid over the top of the turkey.
  5. Cover the slow cooker and cook on LOW for 5 to 7 hours, or on HIGH for 3 to 4 hours. The turkey is done when an instant-read thermometer inserted into the thickest part registers 165 degrees Fahrenheit.
  6. Carefully remove the turkey breast from the slow cooker and place it on a cutting board. Tent it loosely with foil and let it rest for 15 minutes before slicing.
  7. To make the gravy, pour the cooking liquid from the slow cooker into a saucepan, leaving behind any large pieces of fat or herbs. You should have about 1.5 to 2 cups of liquid.
  8. Bring the liquid to a simmer over medium heat. In a small bowl, whisk together the cornstarch and 1/4 cup cold water until smooth to create a slurry.
  9. Slowly whisk the slurry into the simmering liquid. Continue to whisk until the gravy thickens, about 1 to 2 minutes. Taste and add salt or pepper if needed.
  10. Slice the turkey breast against the grain and serve immediately with the fresh herb gravy.

Notes

  • Using a bone-in turkey breast often results in a juicier final product.
  • If you are using a very large slow cooker, you may need to increase the liquid slightly to prevent scorching.
