In a medium bowl, toss the shrimp with lime juice, chili powder, cumin, smoked paprika, garlic powder, oregano, salt, and pepper. Let it sit for 5 minutes.
Heat the olive oil in a large skillet over medium-high heat.
Add the sliced onions and bell peppers to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften and char slightly.
Push the vegetables to one side of the skillet. Add the seasoned shrimp to the empty side of the skillet in a single layer.
