Ingredients
Scale
1.5 lbs carrots, peeled and cut into 1-inch pieces
3 tablespoons unsalted butter, melted
2 tablespoons honey
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easier cleanup.
Place the cut carrots in a large bowl.
In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until well combined. This creates your honey garlic butter glaze.
Pour the glaze over the carrots and toss them thoroughly until every piece is evenly coated.
Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure proper roasting rather than steaming.
Roast for 20 to 25 minutes, tossing them halfway through the cooking time. The carrots should be tender when pierced with a fork and slightly caramelized.
Remove from the oven, sprinkle with fresh parsley, and serve immediately as a sweet and savory carrots side dish.
Notes
To prevent the honey from burning, check the carrots around the 15-minute mark. If the glaze looks too dark, reduce the oven temperature slightly for the remaining time.
If you do not have honey, you can substitute it with maple syrup for a similar sweet and savory carrots result.
For an added aromatic layer, add 1/2 teaspoon of dried thyme or rosemary to the glaze mixture before tossing with the carrots.
