2 cups cooked chicken, shredded
1 (10.5 ounce) can condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup milk
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon salt
1 cup uncooked long-grain white rice
2 cups fresh or frozen broccoli florets
1 cup shredded cheddar cheese, divided
1/2 cup crushed butter crackers (optional topping)
2 tablespoons melted butter (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the cream of chicken soup, cream of mushroom soup, milk, onion powder, garlic powder, pepper, and salt. Mix until smooth.
Stir in the uncooked rice, shredded chicken, and broccoli florets into the soup mixture. Mix everything well to coat.
Pour the mixture into the prepared baking dish.
Cover the dish tightly with aluminum foil.
Bake for 45 minutes.
Remove the foil. Sprinkle 3/4 cup of the shredded cheddar cheese evenly over the top.
If using the topping, mix the crushed crackers with the melted butter and sprinkle over the cheese.
Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the rice is tender, the casserole is bubbly, and the topping is golden brown.
Let the rice casserole rest for 5 minutes before serving.
Notes
You can substitute the uncooked rice with 2 cups of cooked rice to reduce the baking time by 15 minutes.
