Make this bright, sweet and tart cocktail using fresh raspberries and honey instead of plain sugar. This easy shaken daiquiri is perfect for summer parties.

Ingredients

  • 2 oz light rum
  • 1 oz fresh lemon juice
  • 0.75 oz honey simple syrup (see Notes)
  • 0.5 oz fresh lime juice
  • 5 fresh raspberries
  • Ice

Instructions

  1. Prepare the honey simple syrup ahead of time.
  2. Place the fresh raspberries into a cocktail shaker. Gently muddle them to release the juice.
  3. Add the light rum, fresh lemon juice, honey simple syrup, and fresh lime juice to the shaker.
  4. Fill the shaker with ice.
  5. Seal the shaker and shake hard until the shaker is well-chilled, about 15 to 20 seconds.
  6. Double strain the mixture into a chilled coupe or cocktail glass to remove seeds and pulp.
  7. Serve immediately as a shaken cocktail, or pour into a blender with 1 cup of ice and blend for an easy frozen daiquiri variation.

Notes

  • To make honey simple syrup, combine equal parts honey and hot water (e.g., 1/2 cup honey and 1/2 cup water). Stir until the honey dissolves completely. Let it cool before using. This is a natural sweetener cocktail base.
  • For a brighter flavor, use fresh, ripe raspberries.
  • If you prefer a sweeter drink, increase the honey simple syrup by 0.25 oz.
