  • 12 small corn or flour tortillas

  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • Juice of 1/2 lime
  • 1/4 cup fresh cilantro, chopped
  • Pinch of salt
  • For Toppings:
  • 1 cup shredded green cabbage
  • 1/2 cup shredded carrot
  • Extra lime wedges

Instructions

  1. Prepare the shrimp seasoning: In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Squeeze the juice of one lime over the seasoned shrimp. Set aside while you prepare the crema.
  2. Make the avocado crema: Combine the avocado, Greek yogurt, lime juice, chopped cilantro, and a pinch of salt in a food processor or blender. Blend until completely smooth. Add a teaspoon of water if the mixture is too thick.
  3. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2 to 3 minutes per side until pink and opaque. Do not overcook. Remove the shrimp from the heat.
  4. Warm the tortillas: Warm the tortillas according to package directions, either in a dry skillet for 30 seconds per side or wrapped in a damp paper towel in the microwave.
  5. Assemble the tacos: Layer the warm tortillas with the cooked shrimp. Top with shredded cabbage and carrot. Drizzle generously with the creamy avocado crema. Serve immediately with extra lime wedges.
