  • 1 (15 ounce) can pure pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 box (15.25 ounces) yellow cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup chopped pecans
  • 1/2 cup packed light brown sugar

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt until fully combined. This is your pumpkin filling.
  3. Pour the pumpkin filling evenly into the prepared baking dish.
  4. Sprinkle the dry yellow cake mix evenly over the pumpkin layer. Do not mix.
  5. In a separate small bowl, combine the chopped pecans and brown sugar. Mix them together.
  6. Drizzle the melted butter evenly over the cake mix layer.
  7. Sprinkle the pecan and brown sugar mixture over the top of the buttered cake mix.
  8. Bake for 45 to 55 minutes, or until the topping is golden brown and a toothpick inserted near the center comes out mostly clean. The center will remain gooey.
  9. Let the cobbler cool slightly on a wire rack for at least 15 minutes before serving.
  10. Serve warm, ideally with a scoop of vanilla ice cream for the best fall dessert experience.
