Make this soft, moist protein banana bread using Greek yogurt and protein powder. It is a healthy breakfast bake that fuels your day.

  • 3 very ripe medium bananas, mashed
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup melted coconut oil or neutral oil
  • 1/2 cup maple syrup or honey (or low-calorie sweetener equivalent)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1/2 cup vanilla or unflavored whey protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (optional: chocolate chips or chopped walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Add the Greek yogurt, melted oil, sweetener, eggs, and vanilla extract to the mashed bananas. Whisk these wet ingredients together until they are well combined.
  4. In a separate medium bowl, whisk together the oat flour, protein powder, baking soda, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are acceptable.
  6. If using, fold in your chocolate chips or nuts now.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  9. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.

Notes

  • For the best moisture, use bananas that are heavily spotted or almost black.
  • If you prefer a lower-sugar option, substitute the maple syrup with a zero-calorie liquid sweetener that measures like sugar.
  • This bread is excellent for meal prep; slice it and store individual portions in the freezer for a quick protein packed snack.
