3 lbs Russet potatoes, peeled and cubed
1 cup whole milk, warmed
4 tablespoons unsalted butter
8 ounces cream cheese, softened
1 cup sour cream
1 cup shredded sharp cheddar cheese, plus 1 cup for topping
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
6 slices bacon, cooked and crumbled
1/2 cup chopped green onions, for topping
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Place the cubed potatoes in a large pot and cover with salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15 to 20 minutes. Drain the potatoes well.
Return the drained potatoes to the hot pot. Add the warmed milk, butter, and cream cheese. Mash until smooth.
Stir in the sour cream, 1 cup of sharp cheddar cheese, salt, pepper, and garlic powder until everything is fully combined and creamy.
Fold in half of the crumbled bacon.
Spread the potato mixture evenly into the prepared baking dish.
Top the casserole evenly with the remaining 1 cup of sharp cheddar cheese.
Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the edges are lightly golden brown.
Remove from the oven. Sprinkle with the remaining bacon and fresh green onions before serving hot.
Notes
You can prepare this entire casserole, cover it, and refrigerate it up to 24 hours before baking. Add 10 to 15 minutes to the bake time if cooking straight from the refrigerator.
For an extra savory flavor, substitute half of the sharp cheddar with Monterey Jack cheese.
If you do not have fresh potatoes, you can substitute 30 ounces of frozen, thawed hash browns for a quicker preparation.
