  • 1 pound spaghetti or angel hair pasta
  • 4 cups chicken broth or water
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional garnish)

Instructions

  1. Place the pasta, chicken broth, and minced garlic into a large, deep skillet or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat. Stir frequently to prevent the pasta from sticking to the bottom of the pan.
  3. Reduce the heat to medium and continue to simmer, stirring often, until the pasta is cooked through and most of the liquid has been absorbed, about 10 to 12 minutes. The liquid should reduce to a thick, starchy sauce.
  4. Remove the skillet from the heat. Stir in the butter until it melts completely into the sauce.
  5. Add the heavy cream and the grated Parmesan cheese. Stir continuously until the cheese is fully melted and the sauce is smooth and creamy.
  6. Season with salt and pepper to taste. If the sauce seems too thick, add a splash of hot water or broth until you reach your desired consistency.
  7. Serve immediately in bowls, topped with extra Parmesan cheese and fresh parsley, if using.

  • For a richer flavor, use half chicken broth and half milk instead of all broth.
  • If you want to add protein, cook chicken breast separately and stir it in at the end.
