Oven Garlic Cabbage Wedges

Roast cabbage wedges in the oven with fresh garlic for a simple, flavorful, and low-carb vegetable side dish.

  • 1 medium head green cabbage
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. Remove any loose outer leaves from the cabbage. Cut the head of cabbage into 8 equal wedges, keeping the core intact to hold the wedges together.
  3. In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  4. Place the cabbage wedges on the prepared baking sheet. Brush the olive oil and garlic mixture evenly over all sides of the cabbage wedges.
  5. Roast for 20 to 25 minutes, flipping the wedges halfway through the cooking time. The edges should be slightly browned and the cabbage tender.
  6. If using, sprinkle the Parmesan cheese over the wedges during the last 5 minutes of cooking.
  7. Remove from the oven, drizzle with fresh lemon juice, and serve immediately as an easy roasted veggie side.

Notes

  • For a richer flavor, you can add 2 slices of chopped bacon to the pan before roasting.
  • If you prefer a softer texture, cover the pan loosely with foil for the first 15 minutes of roasting.
  • This recipe works well for a keto cabbage recipe or a low carb cabbage bake.
