Make this easy, one-pan honey garlic chicken and broccoli for a quick weeknight dinner. It features tender chicken and crisp broccoli coated in a sticky, savory sauce with minimal cleanup.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced fresh garlic
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Optional: Sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the cut chicken pieces with olive oil, salt, and pepper until evenly coated. Spread the chicken in a single layer on one half of the prepared baking sheet.
  3. Toss the broccoli florets with a small drizzle of olive oil and spread them on the other half of the baking sheet.
  4. Bake for 15 minutes.
  5. While the chicken and broccoli bake, prepare the sauce. In a small saucepan, combine the honey, soy sauce, rice vinegar, minced garlic, and ginger. Bring the mixture to a simmer over medium heat.
  6. Whisk in the cornstarch slurry and cook for 1 minute, stirring constantly, until the sauce thickens slightly. Remove from heat.
  7. Remove the baking sheet from the oven. Drizzle half of the honey garlic sauce over the chicken and toss the broccoli lightly with the remaining half of the sauce.
  8. Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  9. Serve immediately, garnished with sesame seeds if desired. This pairs well with steamed rice for a complete family dinner.

Notes

  • For a crispier texture, you can broil the chicken and broccoli for the last 2 minutes, watching closely to prevent burning.
  • If you prefer a thicker glaze, increase the cornstarch in the slurry to 1.5 teaspoons.
  • This recipe is a great option for meal prep; store leftovers in an airtight container in the refrigerator for up to 3 days.
