2 lbs ground beef
1 cup bread crumbs
1 large egg, lightly beaten
1/2 cup milk
1 small onion, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried parsley
1 cup shredded cheddar cheese, divided
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup water
1/2 cup ketchup
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
1 cup frozen mixed vegetables (peas and carrots)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the ground beef, bread crumbs, egg, milk, chopped onion, salt, pepper, and parsley. Mix gently with your hands until just combined. Do not overmix.
Press the meat mixture evenly into the bottom of the prepared baking dish. Sprinkle half (1/2 cup) of the shredded cheddar cheese over the meat layer.
In a separate small bowl, whisk together the cream of mushroom soup, water, ketchup, brown sugar, and Worcestershire sauce until smooth.
Pour the sauce mixture evenly over the cheese layer. Sprinkle the frozen mixed vegetables over the sauce.
Bake for 40 minutes.
Remove the casserole from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
Return to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the meat is cooked through (internal temperature reaches 160 degrees Fahrenheit).
Let the casserole rest for 5 minutes before slicing and serving.

For a Potato Meatloaf Casserole variation, replace the mixed vegetables with 2 cups of pre-cooked, sliced potatoes layered over the sauce before the final cheese topping.
