Ingredients
Scale
8 bone-in, skin-on chicken thighs
1/2 cup olive oil
1/4 cup fresh lemon juice
4 cloves garlic, minced
2 tablespoons dried oregano
1 tablespoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to make the best chicken marinade ideas.
Place the chicken thighs in a large, resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
Refrigerate the chicken. You can marinate chicken for at least 2 hours, but for the best flavor, marinate chicken for 4 to 6 hours. Do not marinate longer than 12 hours.
When ready to cook, preheat your grill to medium heat (about 375 degrees F) or preheat your oven to 400 degrees F.
If grilling, place the marinated chicken thighs skin-side down on the oiled grates. Grill for 6 to 8 minutes per side until the internal temperature reaches 165 degrees F. This makes excellent grilled marinated chicken.
If baking, place the chicken thighs skin-side up in a baking dish. Bake for 30 to 35 minutes, or until the internal temperature reaches 165 degrees F. This creates baked chicken thigh recipes with crispy skin.
Let the chicken rest for 5 minutes before serving. This is a quick chicken thigh meal.
Notes
If you have excess marinade after removing the chicken, you can boil it for 5 minutes to use as a light sauce, but do not reuse marinade that touched raw chicken without boiling it first.
For an air fryer marinated thighs version, cook at 370 degrees F for 18 to 22 minutes, flipping halfway through.
This recipe is a healthy marinated chicken option when served with fresh vegetables.
