Ingredients
Scale
1 cup fresh lemon juice
2 cups tonic water, chilled
1 cup ice cubes
1/4 cup granulated sugar (adjust to taste)
1 teaspoon lemon zest
Instructions
Combine the fresh lemon juice, chilled tonic water, granulated sugar, and lemon zest in a blender.
Add the ice cubes to the blender.
Pulse the mixture briefly. Do not over-blend; you want a coarse, icy texture, not a smooth smoothie consistency. Stop blending when the ice is broken down but still visible.
Taste the slush. If you prefer it sweeter, add a small amount of simple syrup or sugar and pulse once more.
Serve immediately in chilled glasses.
Notes
For a stronger quinine flavor (the tonic’s signature taste), use a premium tonic water.
If the carbonation seems lost, add a splash of fresh tonic water just before serving and stir gently.
Garnish with a thin lemon wheel or a sprig of mint for visual appeal.
