Make this hearty, low-carb white chicken chili for a comforting, family-friendly dinner. This recipe uses cream cheese for a rich texture and includes instructions for both the Instant Pot and Slow Cooker, making it perfect for easy weeknight meals and keto meal prep.

  • 2 lbs boneless, skinless chicken breasts or thighs (or 4 cups shredded rotisserie chicken)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can diced green chiles, undrained
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, cut into cubes
  • 1/2 cup heavy whipping cream
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Optional toppings: avocado slices, shredded Monterey Jack cheese, sour cream

Instructions

  1. If using raw chicken, place the chicken breasts in the Instant Pot or Slow Cooker. Add onion, garlic, green chiles, chicken broth, cumin, oregano, salt, and pepper.
  2. For Instant Pot: Secure the lid and set the valve to sealing. Cook on High Pressure for 12 minutes. Allow pressure to naturally release for 10 minutes, then quick release any remaining pressure.
  3. For Slow Cooker: Cover and cook on Low for 6-8 hours or on High for 3-4 hours.
  4. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  5. Stir in the cream cheese cubes until they are fully melted and the chili thickens slightly.
  6. Stir in the heavy whipping cream until the chili is smooth and creamy. Heat through for 2-3 minutes, but do not boil after adding cream.
  7. Taste and adjust salt and pepper as needed.
  8. Serve your keto white chicken chili hot, garnished with cilantro and your favorite low-carb toppings.

Notes

  • For a thicker chili without beans, you can blend about 1 cup of the chili mixture (before adding cream cheese) and stir it back in.
  • Using pre-cooked rotisserie chicken saves about 20 minutes of cooking time; add it during the last 30 minutes of slow cooking or after pressure cooking/shredding.
