  • 4 bone-in pork chops (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, paprika, and thyme to create the spice rub.
  3. Pat the pork chops dry with paper towels. This step helps the rub stick and promotes better searing/browning.
  4. Rub the olive oil evenly over all sides of the pork chops.
  5. Generously coat both sides of each pork chop with the prepared spice rub, pressing the seasoning gently into the meat.
  6. Place the seasoned pork chops in the prepared baking dish in a single layer.
  7. Bake for 18 to 25 minutes, depending on thickness, until the internal temperature reaches 145°F (63°C) when checked with a meat thermometer.
  8. Remove the pork chops from the oven and let them rest on a cutting board, loosely tented with foil, for 5 minutes before serving.

Notes

  • For extra crispy baked pork chops, you can sear them in a hot, oven-safe skillet for 2 minutes per side before placing the entire skillet in the oven.
  • Use a meat thermometer to check for doneness; this is the best way to avoid dry pork chops.
  • Thick-cut pork chops (1.5 inches) will require a longer cooking time.
