Ingredients
Scale
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon almond extract (optional, for authentic flavor)
Beat the softened butter and granulated sugar together in a large bowl until the mixture is light and fluffy.
Beat in the egg yolk and vanilla extract until just combined.
In a separate bowl, whisk together the flour, almond extract (if using), and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
Place the dough into a cookie press fitted with your desired star or ribbon tip.
Press the dough onto baking sheets lined with parchment paper, forming small swirls or shapes.
Bake in a preheated oven at 350 degrees F (175 degrees C) for 10 to 12 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
If desired, dip half of each cooled cookie into melted chocolate and immediately sprinkle with rainbow sprinkles. Let the chocolate set before serving.
Notes
For a true bakery texture, chill the dough for 30 minutes before pressing if your kitchen is warm.
You can substitute some of the vanilla extract with lemon zest for a brighter flavor profile.
These cookies pair well with coffee or tea for a simple dessert.
