Make this easy, flavorful Honey Mustard Chicken Salad for a quick weeknight dinner or satisfying lunch. It combines tender chicken, crispy bacon, and creamy avocado with a tangy sweet dressing.

  • 2 cups cooked chicken breast, shredded or diced
  • 4 slices bacon, cooked crisp and crumbled
  • 1 ripe avocado, diced
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely minced
  • 1/4 cup mayonnaise (or Greek yogurt for lighter version)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mixed greens (optional, for serving)

Instructions

  1. Cook the bacon until crisp. Drain the fat and crumble the bacon; set aside.
  2. In a medium bowl, combine the shredded chicken, chopped celery, and minced red onion.
  3. Prepare the creamy honey mustard dressing: In a separate small bowl, whisk together the mayonnaise, Dijon mustard, yellow mustard, honey, apple cider vinegar, salt, and pepper until smooth.
  4. Pour the dressing over the chicken mixture. Gently fold everything together until the chicken is evenly coated.
  5. Carefully fold in the diced avocado and most of the crumbled bacon, reserving some bacon for garnish.
  6. Chill the chicken salad for at least 15 minutes to allow the flavors to blend.
  7. Serve the salad over mixed greens, on gluten-free crackers, or as a sandwich filling. Garnish with the remaining crispy bacon before serving.
