You make this simple, sweet, and savory vegetable side dish using fresh carrots and green beans coated in a bright honey glaze. It is a quick vegetable side perfect for weeknight dinners or holiday meals.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 1 pound carrots, peeled and sliced diagonally into 1-inch pieces
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the trimmed green beans and sliced carrots.
  3. In a small bowl, whisk together the honey, olive oil, apple cider vinegar, salt, and pepper to create the glaze.
  4. Pour the glaze over the vegetables and toss well until everything is evenly coated.
  5. Spread the vegetables in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  6. Roast for 20 to 25 minutes, stirring halfway through, until the vegetables are tender-crisp and the glaze is slightly caramelized.
  7. Serve this glazed vegetable side dish immediately.

Notes

  • For extra flavor, you can add 1 clove of minced garlic to the glaze mixture.
  • If you prefer a softer vegetable, cut the carrots into smaller pieces or increase the roasting time by 5 minutes.
  • This recipe works well as a vegetable side for roast chicken or pork.
