Make this sweet and savory Honey Garlic Chicken Stir Fry in under 30 minutes. It features tender chicken coated in a sticky glaze with fresh vegetables, making it a perfect, better than takeout, weeknight chicken dinner.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 head of broccoli, cut into florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 teaspoon ground ginger
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch until the cornstarch is dissolved. Set the sauce aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the broccoli florets and sliced bell peppers to the same skillet. Stir fry for 4 to 5 minutes until the vegetables are crisp-tender.
  4. Add the minced garlic and ground ginger to the vegetables. Cook for 1 minute until fragrant.
  5. Return the cooked chicken to the skillet with the vegetables.
  6. Whisk the reserved sauce mixture again and pour it over the chicken and vegetables.
  7. Cook, stirring constantly, until the sauce thickens and coats everything evenly, about 1 to 2 minutes.
  8. Remove from heat immediately. Serve your juicy chicken stir fry over cooked rice and garnish with sesame seeds if desired.

Notes

  • For extra flavor, use chicken thighs instead of breasts.
  • If you want a healthier chicken stir fry, use less honey or substitute half the honey with maple syrup.
  • To achieve the best sear on your chicken, cook it in batches if your skillet is crowded.
