Make these easy roasted carrots coated in a sweet and savory honey garlic butter glaze. This simple oven roasted vegetables recipe is perfect for a quick weeknight side dish.

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 3 tablespoons honey
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the cut carrots in a large bowl.
  3. In a small bowl, whisk together the melted butter, minced garlic, and honey until well combined. This creates your buttery glazed vegetables sauce.
  4. Pour the honey garlic butter mixture over the carrots. Add the salt and pepper. Toss everything together until the carrots are evenly coated.
  5. Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote better caramelization.
  6. Roast for 20 to 25 minutes, tossing halfway through the cooking time, until the carrots are tender and slightly caramelized at the edges.
  7. Remove from the oven. Sprinkle with fresh chopped parsley before serving.

Notes

  • For a slight tang, add 1 teaspoon of apple cider vinegar to the glaze mixture.
  • If you prefer a softer texture, cover the pan loosely with foil for the first 15 minutes of roasting, then remove the foil to allow the glaze to brown.
