Ingredients
Scale
1 cup fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1/2 cup water
2 cups cold milk (whole, 2%, or oat milk for dairy-free)
Optional: Whipped cream for topping
Instructions
Combine the sliced strawberries, sugar, and water in a small saucepan.
Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the strawberries begin to break down, about 5 to 7 minutes.
Reduce the heat to low and simmer for 5 more minutes until the syrup thickens slightly. You can gently mash the strawberries with a spoon for more flavor release.
Remove the syrup from the heat and let it cool completely. For a smoother syrup, strain the mixture through a fine-mesh sieve, pressing on the solids to extract all the liquid. Discard the solids or save them for another use.
To assemble the strawberry milk, pour 2 to 3 tablespoons of the cooled strawberry syrup into a glass.
Add about 1 cup of cold milk to the glass. Stir well until the milk is evenly pink and mixed.
Add ice if you prefer it cold. Top with whipped cream if desired.
Notes
For a café-style Korean strawberry milk, layer the syrup at the bottom of a tall glass, gently pour the cold milk over the back of a spoon to create distinct layers, and serve without stirring immediately.
If you use oat milk or almond milk, you create a satisfying dairy free strawberry milk option.
This simple strawberry syrup recipe keeps well in an airtight container in the refrigerator for up to one week.
