  • 3 lbs bone-in, skin-on chicken pieces (thighs and drumsticks work well)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup packed brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground allspice
  • 1 cup fresh pineapple rings, for grilling

Instructions

  1. Combine the pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, sesame oil, pepper, and allspice in a bowl. Whisk until the sugar dissolves to create the marinade/glaze.
  2. Place the chicken pieces in a large resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting later. Seal and refrigerate for at least 4 hours, or preferably overnight.
  3. Prepare your grill for medium-high heat (about 375°F). Clean and lightly oil the grates.
  4. Remove the chicken from the marinade, letting excess drip off. Discard the used marinade.
  5. Place the chicken skin-side down on the hot grill. Grill for 5 to 7 minutes per side to achieve good grill marks.
  6. Reduce the heat to medium (or move to indirect heat). Continue grilling, turning every 5 to 8 minutes. Baste the chicken generously with the reserved fresh glaze during the last 15 minutes of cooking.
  7. Grill the pineapple rings alongside the chicken during the last 5 minutes of cooking, turning once until lightly charred.
  8. Cook the chicken until the internal temperature reaches 165°F, about 25 to 35 minutes total cooking time, depending on the heat and cut of chicken.
  9. Remove the chicken from the grill. Let it rest for 5 minutes before serving with the grilled pineapple slices over rice.

Notes

  • For extra caramelization, you can briefly place the chicken over direct high heat for the final minute of cooking, watching carefully to prevent burning.
  • Serve this flavor packed chicken with Hawaiian mac salad for an authentic meal.
  • If you prefer boneless chicken, reduce the grilling time by about 5 to 10 minutes.
