  • 3 large, very ripe bananas, mashed
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 1/2 cup melted unsalted butter or coconut oil
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, Greek yogurt, melted butter, brown sugar, eggs, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients. Mix only until the flour streaks disappear. Do not overmix the batter.
  5. Pour the batter into your prepared loaf pan.
  6. Bake for 50 to 65 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, loosely tent it with foil after 40 minutes.
  7. Let the banana bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

  • For a lower-fat option, you can use non-fat Greek yogurt, but the texture may be slightly less rich.
