Ingredients

Scale
  • 1 jar (16 ounces) dill pickle chips, drained well and patted very dry
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup finely crushed cornflakes (for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray (or oil mist)
  • For the Zesty Ranch Dip: 1/2 cup mayonnaise, 1/4 cup sour cream, 2 tablespoons buttermilk, 1 teaspoon dried dill, 1/2 teaspoon onion powder, 1/4 teaspoon garlic powder, pinch of salt and pepper

Instructions

  1. Prepare the pickles: Lay the drained pickle chips on several layers of paper towels and press firmly with more paper towels to remove as much moisture as possible. Dry pickles are key for crispiness.
  2. Set up the dredging station: Place the flour in one shallow dish. In a second dish, whisk the eggs. In a third dish, combine the panko breadcrumbs, crushed cornflakes, garlic powder, smoked paprika, salt, and pepper.
  3. Dredge the pickles: Take a few pickle chips at a time and coat them completely in the flour, shaking off the excess. Dip them into the egg mixture, allowing excess to drip off. Finally, press them firmly into the breadcrumb mixture until fully coated. Place the coated pickles on a wire rack.
  4. Prepare the air fryer: Preheat your air fryer to 390°F (199°C). Lightly spray the air fryer basket with cooking spray.
  5. Air fry in batches: Arrange the coated pickles in a single layer in the air fryer basket, ensuring they do not overlap. Spray the tops generously with cooking spray. Cook for 8 to 10 minutes, flipping halfway through, until they are golden brown and crispy. Add more batches as needed, spraying each batch before cooking.
  6. Make the Zesty Ranch Dip: While the pickles cook, combine all ranch dip ingredients in a small bowl. Whisk until smooth. Taste and adjust seasoning if needed.
  7. Serve immediately: Transfer the hot, crispy fried pickles to a serving platter and serve right away with the zesty ranch dip.

Notes

  • For the crispiest results, ensure your pickles are completely dry before you begin breading them. Excess moisture prevents the coating from sticking.
  • If you prefer deep-fried pickles, heat 2 inches of neutral oil to 375°F (190°C) and fry the pickles in small batches for 1 to 2 minutes until golden brown. Drain on a wire rack.
  • This recipe makes a great game day snack or a crowd-pleasing appetizer for parties.
