Bake these simple pizza muffins for a kid-friendly snack, party food, or freezer lunch addition. They capture classic pizza flavor in a convenient, bite-size form.

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/2 cup pizza sauce

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate bowl, mix the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Gently fold in the mozzarella cheese and pepperoni slices.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Place about 1 teaspoon of pizza sauce on top of the batter in each cup.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For freezer lunches, cool the muffins completely, then place them in an airtight freezer bag. Reheat from frozen in a microwave or toaster oven.
  • You can substitute the pepperoni with cooked, crumbled sausage or diced bell peppers for variety.
  • If you do not have pizza sauce, you can use tomato sauce seasoned with a pinch of oregano and garlic powder.
