Instructions

  1. Wash and hull the strawberries. Crush them using a potato masher or a food processor until you reach the desired consistency.
  2. In a large bowl, combine the crushed strawberries and the sugar. Stir well until the sugar dissolves, about 2 minutes. Let this mixture sit for 10 minutes.
  3. In a separate small bowl, whisk the powdered fruit pectin with the lemon juice, if using.
  4. Add the pectin mixture to the strawberry and sugar mixture. Stir vigorously for 3 minutes to fully combine the pectin. This step is important for setting the jam.
  5. Immediately pour the jam mixture into clean, freezer-safe containers, leaving about 1/2 inch of headspace at the top.
  6. Wipe the rims clean, cover the containers tightly, and let them sit on the counter for 30 minutes to allow the mixture to start setting.
