Make these simple Churro Cheesecake Bars using crescent roll dough for a buttery crust, creamy filling, and a sweet cinnamon sugar topping. This recipe delivers the flavor of churros and cheesecake in an easy-to-serve bar format, perfect for parties.

Ingredients

Scale
  • 1 (8 ounce) package refrigerated crescent roll dough
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup (4 tablespoons) unsalted butter, melted
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking pan.
  2. Unroll the crescent roll dough and press it evenly into the bottom of the prepared pan. Do not stretch the dough; just press the seams together to form a solid crust layer.
  3. In a small bowl, mix 1/2 cup granulated sugar and 1 tablespoon cinnamon. Sprinkle half of this cinnamon sugar mixture evenly over the crescent roll crust.
  4. In a medium bowl, beat the softened cream cheese until smooth. Add 1/2 cup granulated sugar, the egg, and vanilla extract. Beat until the mixture is creamy and well combined.
  5. Spread the cream cheese filling evenly over the cinnamon sugar-dusted crust.
  6. In a separate small bowl, mix the melted butter, brown sugar, and remaining 1 teaspoon of cinnamon until crumbly. Sprinkle this topping mixture over the cheesecake layer.
  7. Bake for 25 to 30 minutes, or until the edges are lightly golden and the center is mostly set.
  8. Remove the pan from the oven and let it cool completely on a wire rack.
  9. Once cool, sprinkle the remaining half of the initial cinnamon sugar mixture (1/2 cup sugar + 1 tbsp cinnamon) over the top for the final churro effect.
  10. Cut the dessert into bars and serve. You can serve them slightly chilled or at room temperature.

Notes

  • For an extra layer of flavor, drizzle cooled bars with dulce de leche or caramel sauce before serving.
  • If you want handheld portions, cut the bars into small squares or use a cookie cutter after the cheesecake has chilled.
  • This dessert is excellent for making ahead; cover and refrigerate for up to two days.
