Make this simple, elegant Caprese Chicken recipe for a juicy, flavorful weeknight dinner. This baked chicken dish uses fresh mozzarella, tomatoes, and basil, finished with a balsamic drizzle.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon olive oil
  • 1 cup cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • 1/4 cup fresh basil leaves, roughly chopped
  • 1/4 cup balsamic glaze (store-bought or homemade)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish or line it with parchment paper.
  2. Place the chicken breasts in the prepared baking dish. Season both sides of the chicken with salt, pepper, and Italian seasoning.
  3. Drizzle the olive oil evenly over the chicken breasts.
  4. Arrange the halved tomatoes over the top of each chicken breast.
  5. Place a slice of fresh mozzarella cheese on top of the tomatoes on each piece of chicken.
  6. Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the cheese is melted and bubbly.
  7. Remove the dish from the oven. Sprinkle the fresh basil over the melted cheese.
  8. Drizzle the balsamic glaze over the entire dish before serving.

Notes

  • For a richer flavor, you can add 2 tablespoons of pesto under the mozzarella layer.
  • If you do not have balsamic glaze, simmer 1/2 cup of balsamic vinegar in a small saucepan over medium heat until it reduces by half and coats the back of a spoon.
  • Use chicken thighs instead of breasts for a moister result, adjusting the cooking time as needed.
