  • 2 medium cucumbers, thinly sliced
  • 2 crisp apples (like Honeycrisp or Granny Smith), cored and thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • For the Dressing:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Prepare the vegetables and fruit: Wash and thinly slice the cucumbers and apples. Thinly slice the red onion. Place all prepared items into a large mixing bowl.
  2. Make the simple vinaigrette dressing: In a small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
  3. Dress the salad: Pour the dressing over the cucumber, apple, and onion mixture. Add the chopped parsley.
