2 crisp apples (like Honeycrisp or Granny Smith), cored and thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
For the Dressing:
3 tablespoons extra virgin olive oil
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1/4 teaspoon salt

Instructions
Prepare the vegetables and fruit: Wash and thinly slice the cucumbers and apples. Thinly slice the red onion. Place all prepared items into a large mixing bowl.
Make the simple vinaigrette dressing: In a small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
