2 lbs boneless, skinless chicken thighs or breasts
1 cup all-purpose flour
1 cup Panko breadcrumbs
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
2 large eggs, beaten
1/2 cup honey
2 tablespoons hot sauce (adjust to your heat preference)
1 tablespoon apple cider vinegar
1 teaspoon butter, melted
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Prepare the chicken: Pat the chicken pieces dry with paper towels.
Set up a dredging station with three shallow dishes. Place the flour, salt, pepper, garlic powder, and paprika in the first dish and mix well. Place the beaten eggs in the second dish. Mix the Panko breadcrumbs in the third dish.
Dredge each piece of chicken first in the flour mixture, shaking off excess. Dip it into the egg mixture, allowing excess to drip off. Finally, press the chicken firmly into the Panko breadcrumbs to coat completely.
Place the coated chicken on the prepared baking sheet. Bake for 20 minutes.
While the chicken bakes, prepare the hot honey glaze. In a small saucepan over low heat, combine the honey, hot sauce, and apple cider vinegar. Stir until the mixture is smooth and warm. Remove from heat and stir in the melted butter.
After 20 minutes of baking, remove the chicken from the oven. Brush the tops generously with half of the hot honey glaze.
Return the chicken to the oven and bake for another 5 to 10 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown and crispy.
Remove the chicken from the oven. Drizzle the remaining hot honey glaze over the chicken before serving. Serve immediately as a weeknight chicken dinner idea.
Notes
For extra crispiness, you can use crushed cornflakes instead of Panko breadcrumbs in the coating mixture.
