Make this rich and comforting one-pan Creamy Crack Chicken Gnocchi for a quick weeknight dinner. It combines tender chicken, soft potato dumplings, bacon, and a cheesy ranch sauce.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 4 ounces cream cheese, cubed
  • 1/2 cup chicken broth
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk (or half-and-half for extra richness)
  • 1/4 cup chopped fresh chives, for garnish

Instructions

  1. Season the chicken pieces lightly with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  2. Add the cooked bacon to the skillet. If the skillet is dry, add a splash of broth.
  3. Reduce the heat to medium. Add the cream of chicken soup, chicken broth, dry ranch seasoning mix, and milk to the skillet. Stir until the mixture is smooth.
  4. Add the cubed cream cheese to the sauce. Stir constantly until the cream cheese melts and the sauce is smooth and creamy.
  5. Stir in the uncooked gnocchi. Bring the mixture to a gentle simmer, then cover the skillet and cook for 5 to 7 minutes, stirring occasionally, until the gnocchi are tender.
  6. Return the cooked chicken to the skillet. Stir in the shredded cheddar cheese until melted and fully incorporated into the sauce. Heat through for 1 minute.
  7. Serve immediately, garnished with fresh chives.

Notes

  • For a thicker sauce, reduce the amount of chicken broth slightly or let the sauce simmer uncovered for a few extra minutes before adding the gnocchi.
  • If you prefer a thinner sauce, add a splash more milk or broth at the end until you reach your desired consistency.
  • You can substitute shredded rotisserie chicken for the raw chicken breasts to save about 10 minutes of cooking time.
