1 pound ground beef
1 tablespoon olive oil
1 medium onion, chopped
4 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups beef broth
1 cup heavy cream
8 ounces dry pasta (like penne or rotini)
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess grease.
Add the chopped onion to the pot with the beef and cook until softened, about 3 to 4 minutes.
Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the beef broth and add the dry pasta to the pot. Bring the mixture to a boil.
Once boiling, reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom, until the pasta is tender and most of the liquid is absorbed.
Stir in the heavy cream and grated Parmesan cheese. Cook uncovered for 2 to 3 minutes, stirring constantly, until the sauce thickens slightly and becomes velvety. Do not let it boil after adding the cream.
Remove the pot from the heat. Taste and adjust salt and pepper if needed.
Serve immediately, garnished with fresh parsley.
Notes
For a high protein beef pasta, use extra-lean ground beef.
You can substitute the beef broth with water and add 1 beef bouillon cube for a similar flavor base.
This recipe works well as a one lb ground beef recipe for a family of four.
