1 cup full-fat cottage cheese
1/2 cup shredded sharp cheddar cheese
1/4 cup Rotel (diced tomatoes and green chilies, drained)
1 tablespoon pickled jalapeño slices, plus 1 teaspoon brine
1/4 teaspoon garlic powder
Pinch of salt
Instructions
Place the cottage cheese, cheddar cheese, Rotel, jalapeño slices, brine, garlic powder, and salt into a food processor or high-speed blender.
Blend the mixture until it is completely smooth and creamy. Stop and scrape down the sides as needed. This usually takes 1 to 2 minutes.
Transfer the mixture to a microwave-safe bowl.
Microwave on high for 30 to 60 seconds, stirring halfway through, until the dip is hot and the cheese is fully melted and incorporated.
Taste and adjust seasoning if necessary.
Serve immediately with tortilla chips, fresh vegetables, or as a topping for tacos or nachos.
Notes
For an even smoother texture, you can use a high-powered blender.
If you do not have a blender, you can use an immersion blender directly in a bowl, though it may take slightly longer to reach a completely smooth consistency.
This dip is excellent served warm but can also be enjoyed cold as a spread.
If you want a thinner consistency, add a teaspoon of milk or water at a time while blending.
