  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup chocolate chips (for batter)
  • 1 cup rainbow candy-coated chocolate chips (for topping)
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large saucepan over medium heat, melt the butter. Remove from heat and stir in the 2 cups of sugar until combined.
  3. Whisk in the eggs one at a time until fully incorporated. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the 1 cup of chocolate chips for the batter.
  6. Spread the batter evenly into the prepared baking pan. Bake for 25 to 30 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  7. While the brownies cool, prepare the ganache. Place the 1 cup of semi-sweet chocolate chips in a heatproof bowl.
  8. In a small saucepan, heat the heavy cream until it just begins to simmer around the edges. Pour the hot cream over the chocolate chips. Let it sit undisturbed for 5 minutes.
  9. Whisk the chocolate and cream mixture until smooth and glossy to create the chocolate ganache topping.
  10. Pour the warm ganache evenly over the cooled brownies.
  11. Immediately sprinkle the top generously with the rainbow candy-coated chocolate chips before the ganache sets.
  12. Allow the ganache to set completely at room temperature, about 1 hour, or chill briefly to speed up the process. Cut into squares.

Notes

  • For the fudgiest texture, avoid overbaking. The center should remain slightly underdone when you remove them from the oven.
  • If you prefer a thicker brownie, use a 9×9 inch pan instead, but adjust the baking time, checking around 35-40 minutes.
