This recipe delivers a creamy, sweet, and comforting corn casserole using Jiffy mix and cream cheese. It is a simple side dish perfect for holidays, potlucks, or family dinners.

  • 1 (8.5 ounce) box Jiffy Corn Muffin Mix
  • 1 (15 ounce) can creamed corn, undrained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup (1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the Jiffy Corn Muffin Mix, creamed corn, drained whole kernel corn, sour cream, and shredded cheddar cheese. Mix until just combined; do not overmix.
  3. Pour the batter into the prepared baking dish.
  4. Pour the melted butter evenly over the top of the batter. Do not stir it in.
  5. Bake for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean.
  6. Let the casserole cool for 10 minutes before you serve it.

Notes

  • For a slightly sweeter casserole, add 2 tablespoons of granulated sugar to the batter mixture.
  • If you want a crispier top, sprinkle 1/2 cup of crushed Ritz crackers mixed with 1 tablespoon of melted butter over the top before the final 15 minutes of baking.
  • This casserole pairs well with Thanksgiving turkey or weeknight chili.
