1/2 cup fresh lime juice (about 4 limes)
1/2 cup chopped fresh cilantro
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground cumin

1/4 teaspoon black pepper
2 cups cooked white or brown rice (for serving)
1 cup black beans, rinsed and drained
1 large avocado, diced
1/2 cup chopped red onion

Instructions
Combine the lime juice, cilantro, minced garlic, olive oil, cumin, salt, and pepper in a bowl or zip-top bag. Add the steak and toss to coat completely. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Prepare your rice according to package directions. While the rice cooks, mix the diced avocado and red onion in a small bowl. Squeeze a small amount of fresh lime juice over the avocado mixture to prevent browning.
Remove the steak from the marinade, letting excess drip off. Discard the remaining marinade.
Heat a large skillet or grill pan over medium-high heat. Cook the steak for 3 to 5 minutes per side for medium-rare, depending on thickness. You want a nice sear.
Remove the steak from the heat and let it rest on a cutting board for 5 minutes before slicing thinly against the grain.
