  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced or chopped
  • 1 tablespoon olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (optional)
  • 1/4 cup low-sodium soy sauce or tamari
  • 2 tablespoons oyster sauce (optional, substitute with more soy sauce for vegetarian/vegan)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup sliced carrots or bell peppers
  • Optional: Cooked rice or cauliflower rice, for serving

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce (if using), honey, and sesame oil. Set aside.
  2. Heat the oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the minced garlic and grated ginger (if using) to the same skillet. Cook for about 30 seconds until fragrant.
  4. Add the zucchini and any optional hard vegetables (like carrots) to the skillet. Stir fry for 3 to 5 minutes until the zucchini is crisp-tender. You want it cooked but still have some bite.
  5. Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables.
  6. Toss everything together quickly to coat evenly, cooking for 1 minute until the sauce thickens slightly. Stir in the black pepper.
  7. Remove from heat immediately. Serve your quick chicken stir fry over rice or cauliflower rice for a complete, healthy chicken dinner.
