1 pound ground chicken
1/4 cup panko breadcrumbs (use gluten free if needed)
1 large egg, lightly beaten
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil, divided
1/2 cup chicken broth
1/4 cup dry white wine or extra broth
1/4 cup fresh lemon juice
1 tablespoon lemon zest
2 tablespoons capers, drained
2 tablespoons unsalted butter
2 tablespoons fresh parsley, chopped, for garnish
Instructions
In a medium bowl, gently combine the ground chicken, panko breadcrumbs, egg, minced garlic, oregano, salt, and pepper. Do not overmix.
Roll the mixture into 1-inch meatballs. You should have about 18 to 20 meatballs.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Brown the meatballs in batches, turning to brown all sides. Remove the browned meatballs and set them aside.
Add the remaining 1 tablespoon of olive oil to the skillet. Pour in the chicken broth, white wine (or extra broth), lemon juice, and lemon zest. Bring the liquid to a simmer.
Stir in the capers. Return the meatballs to the skillet, nestling them into the sauce. Reduce the heat to medium-low, cover, and simmer for 10 to 12 minutes, or until the meatballs are cooked through.
Remove the skillet from the heat. Stir in the butter until it melts and thickens the sauce slightly.
Garnish with fresh parsley before serving. Serve these savory ground poultry meatballs over spaghetti or orzo for a complete dinner.
