Make this quick chicken and green bean stir fry for a healthy weeknight dinner. This simple Asian chicken stir fry comes together fast and uses a flavorful garlic ginger sauce.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 pound fresh green beans, trimmed
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce (or tamari for gluten free)
  • 2 tablespoons water
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • Cooked rice or noodles, for serving

Instructions

  1. In a medium bowl, toss the chicken pieces with cornstarch until lightly coated.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the trimmed green beans to the same skillet. Stir fry for 4 to 6 minutes until they are crisp-tender.
  4. Add the minced garlic and grated ginger to the skillet with the green beans. Cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the soy sauce, water, brown sugar, sesame oil, and black pepper to make the sauce.
  6. Return the cooked chicken to the skillet. Pour the sauce over the chicken and green beans. Toss everything together and cook for 1 to 2 minutes until the sauce thickens slightly and coats the ingredients.
  7. Serve your best green bean chicken stir fry sauce immediately over cooked rice or noodles.

Notes

  • For low carb chicken stir fry option, serve over cauliflower rice or eat as is.
  • If you want to add more vegetables, consider adding sliced carrots or bell peppers along with the green beans.
  • To keep the chicken tender, do not overcrowd the pan when searing. Cook in batches if necessary.
