2 carrots, chopped
2 celery stalks, chopped
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 cup all-purpose flour
4 cups low-sodium chicken broth
1 cup heavy cream or half-and-half
2 cups cooked, shredded chicken (rotisserie chicken works well)
1 cup frozen peas
1 (10.2 ounce) can refrigerated biscuit dough, cut into quarters

Instructions
Melt the butter in a large pot or Dutch oven over medium heat.
Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
Stir in the dried thyme and rosemary. Cook for 1 minute until fragrant.
Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
Slowly whisk in the chicken broth until the mixture is smooth. Bring the liquid to a simmer, stirring occasionally until it thickens slightly.
Stir in the heavy cream and the shredded chicken. Season with salt and pepper. Let the mixture return to a gentle simmer.
Drop the quartered biscuit dough pieces evenly over the simmering chicken mixture. Do not stir them in.
Cover the pot tightly and reduce the heat to low. Let the dumplings steam for 12 to 15 minutes, or until the biscuits are cooked through and fluffy. Do not lift the lid during this time.
Stir in the frozen peas during the last 2 minutes of cooking.
