Make this easy dessert pizza featuring a soft sugar cookie crust, a sweet cream cheese layer, and a bright cherry topping. This is a fun, quick sweet pizza recipe perfect for parties.

Ingredients

Scale
  • 1 package (16.5 ounces) refrigerated sugar cookie dough
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 ounces) cherry pie filling
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 12-inch pizza pan or line it with parchment paper.
  2. Press the refrigerated sugar cookie dough evenly onto the prepared pizza pan to form the crust. Bake for 12 to 15 minutes, or until the edges are lightly golden brown. Remove from the oven and let the crust cool completely on the pan.
  3. While the crust cools, prepare the cream cheese layer. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
  4. Spread the cream cheese mixture evenly over the cooled cookie crust.
  5. Prepare the cherry topping. In a small saucepan, whisk together the cherry pie filling, water, cornstarch, and granulated sugar.
  6. Cook the cherry mixture over medium heat, stirring constantly, until it thickens, about 3 to 5 minutes. Remove from heat and let it cool slightly, about 10 minutes.
  7. Spoon the cooled cherry topping over the cream cheese layer, spreading it gently to cover the surface.
  8. Chill the cherry dessert pizza in the refrigerator for at least 1 hour before slicing and serving.

Notes

  • For a brighter cherry flavor, you can substitute the canned pie filling with fresh cherries cooked down with sugar and a little lemon juice.
  • If you want a glaze instead of a thick topping, mix 1 cup of powdered sugar with 2 tablespoons of milk and 1/2 teaspoon of almond extract, then drizzle over the cream cheese layer before adding the cherries.
  • This recipe works well as a holiday dessert pizza idea when garnished with white chocolate shavings.
