  • 1 pound smoked sausage or Andouille sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning (adjust for heat preference)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 3 cups chicken broth
  • 12 ounces penne or rotini pasta
  • 1 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned, about 4 minutes. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and bell pepper to the pot. Cook until softened, about 5 minutes. Add the minced garlic and Cajun seasoning, cooking for 1 minute until fragrant.
  3. Pour in the chicken broth and the can of diced tomatoes (with juice). Bring the mixture to a boil.
  4. Stir in the dry pasta. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is nearly tender.
  5. Stir in the heavy cream, cubed cream cheese, and the cooked sausage. Continue to cook, stirring gently, until the cream cheese has melted and the sauce is smooth and creamy, about 3 minutes.
  6. Stir in the Parmesan cheese until fully incorporated. Taste the sauce and add salt and pepper if needed.
